2 cups brown rice
2 1/8 cups water
1/4 cup cilantro
Salt and pepper to taste (optional)
Rinse brown rice thoroughly and drain. Then, add water and bring to boil. Once boiling, stir, cover, and reduce heat to simmer for 50 minutes. Turn off heat and let cool for 5 minutes. Mix in cilantro. Add salt and pepper to taste (optional). Enjoy with veggie bowls, burritos, enchiladas, and more!
